There is a revolution occurring at farmers markets today. They no longer sell just fruits and vegetables, but honey, butter for the local dairy farmer, Artisan breads, carrot cake, cupcakes, cookies, pies, jams, jellies and pickled okra and bamboo shoots. If you are interested in selling homemade baked goods or family recipes at your local Farmers Market, stay abreast of food trends by using Goggle Alerts to locate what’s hot and what’s not. What was a huge seller last year may not be this year and although people loved those buttercream topped cupcakes last year they may be seeking smaller versions this year; cutting back to help both their health and wallet.
If you are a home-based baker, baking Artisan breads; you might want to consider offering value-added items, such as homemade jams, jellies and fruit butters. Remember though, some value added products can be costly, so select accordingly and consider selling your products both individually and as a pair. If you knew me 15 years ago you wouldn’t recognize the author, coach and public speaker – with a lot of Moxie – I am today.
I was once the shiest person I knew. As a child, I dreaded the first day of school because I usually had to stand up and tell everyone what I did on my summer vacation. To stand up, speak and have everyone look at me scared the ****** out of me.
As an adult and a Senior Level Executive I often had to give presentations in front of groups including the Board of Directors. Terrified, I couldn’t sleep knowing I was sure to forget everything and look like a blathering idiot. My career – my life – would be ruined. I was sure of that.
I lived. And learned how to step into my fear and insecurity instead of running away from it. I was surprised to find out it took less energy to be willing to be vulnerable than it was to resist what turned out to be not so bad after all.
The way to be secure in your insecurity is simply this:
Suck it up, cupcake.
Your insecurity is real. The reasons for your insecurity probably aren’t. They’re based on your personal view of your situation and you’ve got some schmutz on your lens clouding up your vision. For example, if you’re insecure in your relationship it probably has less to do with your present relationship than it does with a past relationship, beginning with your parents – beginning with your self. Finding Excuses And Reasons (F.E.A.R.) makes you want to Fugghedabout Everything And Run (F.E.A.R.).
Do what scares you anyway.
Take one big step into your insecurity. Be willing to be insecure. Be willing to be vulnerable. You can be secure in your insecurity by being rational.
Unless you’re standing in front of oncoming traffic you’re not going to get hit by a bus, you’re not gonna die. When you stop imagining all the terrible things that could happen you leave room in that head of yours for clarity, focus and a healthy presence of mind.
Heck, you were insecure when you tried to take your first steps. You fell on your butt – again and again. Yet you got up – again and again – putting one wobbly foot in front of the other. Pretty soon you were running, jumping, climbing, skipping and coming up with more and more ways to get yourself to where you want to go.
You’ll realize that even if you screw up royally you’ll be OK. Others have fallen flat on their faces in glorious ways – whether it be in their career, relationships, social gatherings or every day life.
And they lived to tell the tale. So will you. You might even end up with a great story that can be leveraged to your advantage – at least at cocktail parties.
Suck it up, cupcake. Do what scares you anyway. Put one foot in front of the other. You’ll be ok. I promise you.
P.S. – The thing you’re most insecure about may very well be what your heart is calling you to become.

I’m making cupcakes that call for sour cream and the only thing I have close enough is greek yogurt. Can I substitute the cream with the yogurt and bake it normally or do I need to add something to the yogurt (being baked and all)?

You can use the yogurt. Use the same amount. 1 cup sour cream = 1 cup yogurt. Some people like to use flavored yogurt to give the cake an extra punch in flavor.

A Conscious Guide To Saying Good-Bye To Deprivation

Nobody likes deprivation. It just puts us in a bad mood. When we think about being deprived of our favorite foods, it usually stands in the way of our success every time we try to eat differently. Sometimes, it even prevents us from getting started.
Unless we are seriously motivated by something like fitting into a certain pair of pants for a certain occasion, getting ready for an athletic event or knowing that eating something specific will make us immediately sick; feeling deprived often sabotages us. And when we are motivated by these extraordinary factors, the results are often short lived and/or limited. While it’s great in the moment and shows us we can do it, it’s rarely a lasting lifestyle change.
Does this sound at all familiar to you? Have you ever thought that you’d like to change the way you’re eating? Maybe lose a few pounds to change your appearance or your health and keep them off? Maybe you’re just feeling like you need more energy or don’t like the fact that you eat sugary snacks every afternoon. But you just can’t wrap your brain around giving up the foods you love and if you can, it’s only for a very short period of time.
Well let’s look at it from I different angle. Let’s adopt a point of view that may actually allow you to change things permanently.
Like you, I love food. I love it in its raw form and I love cooking it. I love being around it. I love sharing it with people. I love talking about it, writing about it and eating it. I love hearing and seeing what food means to people. In fact, I am admittedly food obsessed and I am very happy with my relationship with food and the choices that I make daily.
I also don’t like deprivation. In fact, little saddens me more than when people feel deprived either because they think something is not good for them or they legitimately cannot eat certain foods. And little angers me more than people buying into the myth that eating food that will support your health means a boring, bland diet of grilled chicken with steamed vegetables or plain tofu and brown rice. Eating food that supports the way you want to look and feel doesn’t mean that you can’t eat delicious food and it doesn’t mean that you can’t eat food you love.
So what’s the solution to deprivation if you want to improve your diet permanently? Change your focus. That’s right, change your mind. Don’t think about what you can’t eat. Instead learn to eat new foods. Start adding delicious and interesting produce, condiments and cooking techniques to the way you eat. Things like sweet beets drizzled with a little roasted walnut oil, creamy mashed sweet potatoes perhaps with a dash of cinnamon and crunchy kale chips made with sea salt. How about some spicy mustard greens sautéed with some sweet onions or garlic and a fresh wild arugula salad with sweet juicy pear, crunchy walnuts and salty Parmigiano Reggiano cheese dressed with a truffle vinaigrette. Sound interesting?
Be creative in the kitchen; add 1 or 2 new ingredients each week, and look to the best of nature for inspiration. Add texture to your dishes by adding nuts and seeds. Snack on a sweet and juicy mango or mash an avocado with a squeeze of fresh lime juice and some sea salt as a dipping sauce for shrimp cocktail. Have fun with it. It isn’t difficult and you will benefit by feeling better. And I am also willing to bet that you’ll be eating better tasting food than you can even imagine today.
Once you learn to think and eat this way, your changes will be lasting and you won’t feel deprived. Please don’t get me wrong, I am not saying eat beets and pumpkin seeds instead of cupcakes, what I am saying is eat beets and pumpkin seeds and you may find yourself wanting cupcakes less often.
