    I was wanting to bake a cupcake recipe..but im vegan.
    And the recipe calls for 2 eggs.
    ANy alternatives good for baking a cupcake or cake.

      “Use 1 heaping tablespoon of soy flour or cornstarch plus 2 tablespoons of water to replace each egg in a baked product.”

      Other substitutes are bananas, applesauce, canned pumpkin (sound gross but you can’t even tell), pureed prunes, soy and bean flour, cornstarch, grounded flaxseeds, tofu (usually silken)… that’s all I can think of! Here’s some measurements.

      1/4 cup applesauce, pureed prunes, or pumpkin = 1 egg
      1/4 cup tofu = 1 egg
      2 tbsp corn starch = 1 egg
      2 tbsp arrowroot flour = 1 egg
      2 tbsp potato starch = 1 egg
      1 heaping tbsp soy powder + 2 tbsp water = 1 egg
      1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.

      On top of what Hispanic at the Disco said, there is also a vegan egg replacer available at most health food stores.

      You can buy “Ener-G Egg Replacer” at many grocery stores now in the area where they sell the health food – at health food stores. If you can’t find it – just ask them to show you where it is.
