Vanilla Cupcake
2/3 cup butter, softened
3/4 cup superfine sugar
1 1/2 cups self-rising flour
3 eggs
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper baking cups.
2. In a large bowl, mix butter and sugar with an electric mixer until light and fluffy, about 5 minutes. Stir in the eggs, one at a time, blending well after each one. Stir in the vanilla and flour just until mixed. Spoon the batter into the prepared cups, dividing evenly.
3. Bake in the preheated oven until the tops spring back when lightly pressed, 18 to 20 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter.
FROST WITH:
Classic Vanilla Buttercream Frosting
1 cup sugar
1/3 cup water
6 egg yolks, lightly beaten 1 1/2 teaspoons vanilla extract
1 1/2 cups butter, softened
6 tablespoons confectioners’
sugar
Directions:
1. In a heavy saucepan, bring sugar and water to a boil; cook over medium-high heat until sugar is dissolved. Remove from the heat. Add a small amount of hot mixture to egg yolks; return all to the pan, stirring constantly. Cook 2 minutes longer or until mixture thickens, stirring constantly. Remove from the heat; stir in vanilla. Cool to room temperature.
2. In a mixing bowl with the whisk attachment, cream butter until fluffy, about 5 minutes. Gradually beat in cooked sugar mixture. Beat in confectioners’ sugar until fluffy, about 5 minutes. If necessary, refrigerate until frosting reaches spreading consistency. Store in the refrigerator.
The easiest way to make vanilla cup cakes is to remember the quantities are equal to the weight of your eggs.
1 egg weighs about 2oz
So for a 2 egg recipe you need
2 eggs
4oz self raising flour
4oz margarine
4oz castor sugar
a drop of vanilla essence
All ingredients in a food mixer together until very well mixed and hey presto you have made cup cakes. Bake in the middle of the oven at a temperatre of about 160 degrees for about 20 minutes.
