I have tried a dozen recipes and spent a lot of money on ingredients. I have tried adding extra milk, extra oil and/or applesauce. The cupcakes always seem to become dry when they cook. Please help me. I wanna hear all tried and true recipes and tips. No more dry cupcakes.

sounds to me like you are over cooking them. Cook for the minimum time the recipe calls for, test to see if they are done with toothpick and remove them from the oven.

The classic sprinkles on top. Or you could make a cupcake cake, but putting the cupcakes in rows and putting icing on top of all of them.

Does anyone have a good recipe for a white frosting (that I can dye orange) for these cupcakes? The only ones I have are buttercreams, and I’m not fond of buttercream.

CREAM CHEESE FROSTING

1/2 c. butter
1 small package cream cheese
1 tsp. vanilla
1 lb. confectioners sugar

Combine butter, cream cheese, and vanilla. Beat until smooth.
Gradually add the sugar, while beating well.

If mixture is too thick to spread, thin to a spreadable consistency by adding a small amount of milk.

Cream-Filled Pumpkin Cupcakes Recipe

21ServingsPrep: 35 min. Bake: 20 min. + cooling

Ingredients

2 cups sugar
3/4 cup canola oil
1 can (15 ounces) solid-pack pumpkin
4 eggs
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground cinnamon

FILLING:
1 tablespoon cornstarch
1 cup milk
1/2 cup shortening
1/4 cup butter, softened
2 cups confectioners’ sugar
1/2 teaspoon Spice Island® Pure Vanilla Extract, optional
Whole cloves, optional
Directions
In a large bowl, combine the sugar, oil, pumpkin and eggs. Combine the flour, baking soda, salt, baking powder and cinnamon; gradually add to pumpkin mixture and beat until well mixed.
Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
For filling, combine cornstarch and milk in a small saucepan until smooth. Bring to a boil, stirring constantly. Remove from the heat; cool to room temperature.
In a large bowl, cream the shortening, butter and confectioners’ sugar until light and fluffy. Beat in vanilla if desired. Gradually add the cornstarch mixture, beating until smooth.
Using a sharp knife, cut a 1-in. circle 1 in. deep in the top of each cupcake. Carefully remove tops and set aside. Spoon or pipe filling into cupcakes. Replace tops. If desired, add a clove “pumpkin stem” to the tops. Yield: about 1-3/4 dozen.

You can always buy a box of cake mix, but here are a couple recipes for you. You’re not going to find a recipe that actually tastes good without these ingredients-

1 3/4 c. flour
3 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1/2 c. shortening
2/3 c. milk
3 eggs
1 tsp. vanilla

Blend all ingredients except the flour together in mixing bowl. Sift in flour gradually. Beat 2 minutes with electric mixer or until well blended. Spoon into greased muffin cups (or paper liners). Fill 1/2 to 2/3 full. Bake in 375 degree oven 20 to 25 minutes. Yield: 18 cupcakes..

Peanut Butter Chocolate Cupcake

• 2 1/4 cups all purpose flour
• 1 1/2 cups sugar
• 1/2 cup creamy peanut butter
• 3 1/2 teaspoon baking powder
• 1 teaspoon salt
• 1/8 teaspoon baking soda
• 3 tablespoons cocoa
• 1 1/4 cups 2% milk
• 1 teaspoon vanilla
• 3 large eggs

Preheat oven to 350 degrees. If desired, line cupcake pans with paper liners. You may also spray cupcake pas with a butter and flour combination spray that can be found in your local grocery store.
Combine all ingredients in a large mixing bowl. Mix at low speed for 30 seconds while scraping bowl. Mix at high speed for 3 minutes, scraping bowl every minute.
Spoon cupcake batter into liners until they are 1/2 to 2/3 full. You should have enough batter for 24-36 cupcakes.
Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes in pans then move to wire rack to cool completely.
Frost your peanut butter and chocolate cupcakes any way you want. You could even try just spreading extra peanut butter as your frosting.

i dont have a recipe but you could probably make regular cupcakes and put frosting on them so they look like soccer balls, basketballs,etc. good luck with that.
