Is there something I can do with the temperature setting or the amount of time that the cupcakes are in the oven? Maybe add something to the instant mix batter? It’s just that my cupcakes always come out dry and hard when I follow the directions on the back of the box.

the boxes are pretty fool proof. start with the minimum cooking time and check with a toothpick from there. when you use the oil, you will want to use vegetable or canola oil. one other thing, when making cupcakes and you don’t have enough batter, do you put water in the empty cups in the pan? this helps all the others cook more evenly.
