Cream of tartar is a leavening agent. If you have baking powder in your recipe you might be able to get away without using it but there is really no substitute for it.

Were having a very informal backyard garden wedding at my parents house and I’m wondering if we should use cupcakes instead of a cake? Has anyone does this? And what are your thoughts? Thanks!

My first oppinion:cheap….but if u dont have enough money for a cake,its ok.I hope i wasn’t to harsh…Imagine that u will view a videotape of your weding,or pictures of you 2,cutting the cake.that’s a keeper,i tell you ;) !

I’ve been wanting to try out a Chocolate-Espresso cupcake recipe all week, but I just realized that I accidentally bought cream cheese when it called for sour cream. I figure, since the cupcakes are sweet, the cream cheese should be fine, right? But baking is always more finicky with that kind of stuff, so I figured I should make sure.

I’m a pastry chef by profession and no you can’t substitute something with less liquid in a cake recipe. To get the cream cheese in your recipe turn it into a simple icing with icing sugar and a little squeeze of lemon juice or zest to brighten it up…..as for the cake recipe, try using yogurt instead of sour cream.
If it’s a simple matter of not having the ingredient you can make your own version and much better than store bought sour cream with a simple formula of 90% cream(35%-also known as whipping cream works best) and 10%lemon juice, let this mixture sit out at room temp overnight**this is food safe and won’t harm you** you’re simply breeding the same bacteria used in yogurts and sour cream, try this out and I guarantee you will never buy sour cream again.
Good luck baking but unless you want to make cheesecake cupcakes you aren’t going to be able to substitute those ingredients.
