    I have tried a dozen recipes and spent a lot of money on ingredients. I have tried adding extra milk, extra oil and/or applesauce. The cupcakes always seem to become dry when they cook. Please help me. I wanna hear all tried and true recipes and tips. No more dry cupcakes.

    sounds to me like you are over cooking them. Cook for the minimum time the recipe calls for, test to see if they are done with toothpick and remove them from the oven.

    Will cupcakes I bake Sunday night still be moist for Tuesday afternoon?

    I have to make a lot of cupcakes for a lunch function on Tuesday. If I bake them on Sunday night (but wait to ice them on Monday night) will they still be moist by Tuesday lunch? Should I store them in an air-tight container or with the lid loose?

    Airtight container in the fridge to slow down the aging process. If air is allowed to stay with them then they will mold and dry out. If you put them in a container with a paper towel, it will soak up any extra moisture while allowing the muffins to remain moist.

    I’m a pretty good baker and have tried several yellow cupcake recipes, but they are too dense. Almost pound cake like. I’m trying to go for the texture like Publix would have or the box cakes. Anybody know of a good recipe?

    The boxed mixes have the texture figured out, while scratch cakes have their own character. Use a mix, but add extra vanilla or some lemon zest to make the cupcakes a bit special.
