Chocolate Cupcakes with Peanut Butter Frosting – Pt 1

Chocolate Cupcakes 1/2 c. Butter 1 1/2 c. Sugar 3 Eggs; beaten 1 tsp. Vanilla 2 c. Flour 1/2 c. Cocoa 4tsp. Baking Powder 1/2 tsp. Salt 1 1/4 c. Milk Cream butter and sugar. Add eggs and vanilla, beating lightly. Sift flour, cocoa, baking powder and salt. Add dry ingredients to creamed mixture, alternating with milk. Beat mixture well. Pour batter into paper baking cups. Bake at 350 for 20-25 mins, or until a toothpick comes out clean. ———————————- Peanut Butter Frosting -Yeilds 2 Cups; more than enough for 2.5 dozen cupcakes- 1/2 Butter 1 c. Peanut Butter 2 c. Confectioners Sugar 3 tbsp. Milk Cream PB & Butter together. Gradually add Sugar. When it’s thick add the milk 1 tbsp. at a time. Mix for 3 mins until fluffy.

From www.livewellhd.com Peanut Butter Chip Cupcakes Cupcake Ingredients 1 cup unbleached all purpose flour 1 tsp baking powder 1 tsp salt 6 tbsp unsalted butter, at room temperature 3/4 cup smooth all natural peanut butter, at room temperature 1/2 cup packed dark brown sugar 1/2 cup sugar 2 large eggs 1 tsp vanilla extract 1/2 cup whole milk 2 cups semi-sweet chocolate chips Instructions Preheat oven to 350 degrees. Combine milk and vanilla in small bowl. Combine flour, baking powder and salt in bowl. Beat butter and sugars in mixer until light and fluffy. Add eggs and blend until smooth. Slowly mix in peanut butter. Add half the flour mixture and blend slowly. When fully incorporated, add milk mixture. Continue to blend slowly. Add remaining flour mixture and mix on low speed just until incorporated. Add chocolate chips and fold in by hand. Scoop into 12 lined baking cups and bake for about 22 minutes, or until tops spring back when lightly touched and the edges are golden brown.
