    Question by Henry Chicane: Should I pay off on this cupcake bet (poll)?
    A family member and I were just watching Cupcake Wars. (yeah, I know) She asked who I thought was going to win and I picked a contestant, and she said she thought it would be one of the other ones, and asked if I wanted to bet and I agreed to a cash wager.

    The show ends and she wins the bet. It then comes out that the show is a rerun and she saw the episode before and knew who would win. I say that invalidates the bet. She said since I never asked if she saw it before, and she didn’t lie about it or anything, the bet is valid and I have to pay.

    We both agreed to put it to a vote on here and be bound by the results of the poll after a certain amount of time.

    At my work, there’s going to be an awards ceremony for about 100 people, most of whom are children. I’d like to bring cupcakes, but I don’t know how many to make. There are going to be other desserts besides mine (like cakes and brownies), and I’d like to see what you think is a good number of regular-sized cupcakes for me to add to the dessert table.

    For a Lighter Vanilla Cake That Doesn’t Taste Light, Make This Lite Vanilla Cake

    Love desserts but don’t want to consume so much fat and sugar? Then we have the recipe for you! This two layer Vanilla Cake is lightened but doesn’t lose any of the taste! No one will ever know you are serving a “lite” cake unless you tell them!  Replacing butter with sugar-free applesauce and whole eggs with egg whites makes the difference.  But the difference is taste is so small you won’t even notice.  This makes a great cake for birthdays and other special occasions.  Also great for cupcakes.

    LITE VANILLA CAKE
    1/4 cup unsweetened applesauce
    1/4 cup shortening
    1 1/2 cups sugar*
    4 egg whites
    1 1/2 tsp vanilla extract
    2 1/4 cups cake flour, sifted
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 cup low-fat buttermilk
    nonstick cooking spray

    Preheat oven to 350 degrees. Spray two 9-inch round cake pans with nonstick cooking spray and sprinkle with flour; set aside.

    In a large mixer bowl cream the shortening and sugar until crumbly, approximately 2 minutes. Add the egg whites, one at a time, beating well after each addition. Beat in the applesauce and the vanilla extract.

    In a separate bowl, combine the cake flour, baking powder, baking soda, and salt. Add flour mixture to the batter alternately with the buttermilk until well combined. Pour the batter evenly into the two prepared pans. Bake at 350 degrees for 20 to 25 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from oven and cool in pans for 10 minutes before removing to wire racks to finish cooling completely.

    FROSTING:

    3 cups powdered sugar
    1/4 cup butter or margarine, softened
    1 tbsp light corn syrup
    2 tsp vanilla extract
    dash of salt
    2 to 3 tbsp lowfat milk

    Beat the powdered sugar, butter or margarine, corn syrup, vanilla and salt together adding enough milk to reach spreading consistency.

    Place one layer on cake plate. Spread frosting over the top, add the second layer. Frost top and sides of cake.

    *You can reduce the sugar further by using Splenda Sugar Blend.

    Make Christmas Tree Cupcakes This Year

    Chirstmas is coming soon,have you ever prepared your Christmas cupcakes well?Why not charm everyone with these pretty little cupcakes with little Christmas trees sitting atop them? You will be surprised at how easy it is to make them and how fast you can whip up batches to feed a crowd! Whipped cream and one single icing tip is all you need to make these.

    What You Will Need:

    • Cupcakes, any flavor

    • Sweetened Whipped Cream

    • Green Food Coloring

    • Chopped candied fruit, red

    Equipment Need:

    • Icing Bag

    • Open Star Icing Tip

    How To:

    1. Whip whipping cream till stiff peaks form.

    2. Reserve some plain white icing for the floret border and add a tiny drop of green food color to the rest.

    3. Mix the color into the cream very lightly to get a marbled effect.

    4. Spread this icing on each cupcake with an icing knife or spatula.

    Making the Trees

    1. Mix in green food coloring to the remaining icing to make the trees.
    2. Fit an icing bag with an open star tip (No. 17 or 18) and fill the bag with the green whipped cream.
    3. To start making the trees, pipe out cream in center of the cupcake and bring outwards. For the first few lines, bulge out the icing in the center and then bring out. This will give the base of the tree some height for the other ‘branches’ to stand.

    Floret Border:

    With the same icing tip and plain white whipping cream, make little florets all around the edge of the cupcake.

    Pipe out cream and press slightly on the same place to form a little floret. Make florets close to each other all around the rim.

    Decorations:

    1. Sort out red colored candied fruit from a mixed pack or use dried red berries.

    2. Chop them up and puck into the trees to make tree decorations.

    Tips:

    Whether preparing for your family or for a party, assembly line is the best way to get these done quick and well. Spread cream icing on all cupcakes first and then make trees on all of them.

    Try making the trees and florets on a plate first. Once you get the hang of it, start making them on the cupcakes.

    4) Bake cupcakes according to chocolate cake mix instructions. Cupcakes are done when you insert a toothpick into the cupcake and it comes out clean.

    Variation: If you want your diet cupcakes to be of the vanilla kind or of non-chocolate origin, substitute the chocolate cake mix for white or yellow cake mix and the diet soda for a clear diet one. These diet cupcakes basically have 120 calories or less per piece depending on the cake mix you are using. With such low calorie count for a dessert, these cupcakes are definitely good for weight loss watchers who still want to maintain some normalcy in their diet. Then, for the other part, add in chocolate and 4 tbsps of cream, blending well until you reach the right consistency. When your chocolate frosting is ready, spread it on the top and sides of cake. You could also adorn the top with jack-o-lantern, which is made of orange frosting.

    You may also use margarine as a substitute for butter. Also, an electric beater can help give your frosting better consistency and a really nice, soft fluff. If you don’t have an electric beater, you may use an egg beater. Make sure to blend all ingredients well to achieve your desired consistency.

    Now you’re ready to give your holiday cupcake the frosting it deserves! Write words or put whatever design you like on your cupcakes! Let your creative juice flow. It’s that simple! Go and try it yourself. You won’t even have to break a sweat at it.
