I have tried a dozen recipes and spent a lot of money on ingredients. I have tried adding extra milk, extra oil and/or applesauce. The cupcakes always seem to become dry when they cook. Please help me. I wanna hear all tried and true recipes and tips. No more dry cupcakes.

sounds to me like you are over cooking them. Cook for the minimum time the recipe calls for, test to see if they are done with toothpick and remove them from the oven.

Measurements are as follows For 24 cupcakes/1 sandwich cake 6oz sugar 6oz butter 6oz self raising flour 3 eggs (at least medium) vanilla extract/vanilla pods (to taste) 1 tsp baking powder (optional) For 12 cupcakes 3oz sugar 3oz butter 3oz self raising flour 2 eggs (at least medium) vanilla extract/vanilla pods (to taste) 1/2 tsp baking powder (optional) cream the sugar and the butter beat in the eggs mix in the flour ass baking powder add vanilla to taste put in preheated oven (180) for 12 mins (for cupcakes) if you’re making a sandwich cake but the two tins in the oven at the same temperature for approx 25mins…do not open the oven until after this time when you can check if it is ready! As a test to see if it is cooked through put in a fork or a knife, if it comes out clean it’s done, if it has bits of cake stuck to it it probably needs 5/10 mins. I’m baking cupcakes for a child’s birthday party and I need a recipe for icing that I can pipe onto them. Something sort of like the type of frosting they use on the Tres Leches cake. Or any light fluffy icing that would work. Any suggestions?

Buttercream!

Ingredients:
* 1/2 cup solid vegetable shortening
* 1/2 cup (1 stick) butter or margarine softened
* 1 teaspoon clear vanilla extract
* 4 cups sifted confectioners’ sugar (approximately 1 lb.)
* 2 tablespoons milk
Makes: About 3 cups of icing.

In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.
